Medenki (Honey Cookies)

 

It’s Christmas! Well, it’s almost Christmas, but no matter what holiday you celebrate, the holiday season is falling upon us. For my family, this has always meant that my mom makes…. cookies! No, it’s not your typical sugar or gingerbread cookies. It’s better than that. She makes honey cookies. I think the reason I probably have such a strong love for these cookies is because my grandmother, who is the master of all things sweet, makes these for us whenever we go back home to Bulgaria. So to me, they not only signify the holiday season, they bring nostalgia as well.

In Bulgaria, my grandfather is a beekeeper, so needless to say, we always have tons of honey around us. Also needless to say, since everyone in my family has grown up with loads of honey around them, we’re all big fans, to say the least. That’s why for this week’s blog post, I thought it was fitting to introduce you to the honey cookie.

Recipe

Ingredients

  • 2 eggs
  • 1 cup oil
  • 1 cup white sugar
  • 1 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 2 tablespoons honey
  • White flour (however much the mix takes)

Directions

  1. Preheat the oven to 425 degrees Fahrenheit
  2. Mix the eggs, oil, sugar, baking soda, cinnamon, and honey together.
  3. Start adding flour slowly until the mix is the right consistency. You know the batter is the right consistency when it will stay in a nice ball (is not too runny, but is not too hard where it is breaking off).
  4. Scoop little balls or whatever shape and size bites and lay them on a baking sheet in a baking pan.
  5. Bake for around 20 minutes or until golden brown.

Thoughts

These cookies are probably some of the easiest you can make, and they take no time at all. They are also super versatile in the sense that I’ve seen them covered in chocolate or honey. I’ve also seen them with a walnut in them or even two stuck together with a sort of jam or marmalade. They are just sweet enough, but not overpowering, and the taste of the honey comes through despite there not being a ton in the recipe. If you have the ingredients on hand, who cares if it’s not the holidays? Make them anyway!
