In my last blog, I talked about how Bulgarians often stuff peppers with other foods, like beans, during the winter. Those peppers, however, happen to be dried. The reason behind it is because raw, fresh peppers are not available during the winter like they are in the summer, so instead, the peppers are dried throughout autumn. I know many people dry chili peppers, but I’m not sure how popular the idea of drying non-spicy peppers is in the United States.
